5 Irresistible Recipes To Help You Eat More Coconut Oil

If you haven’t had a chance to cook with coconut oil, you are missing out boys and girls!

Seriously.

This post is a short  list of incredible coconut oil recipes to soothe a sweet tooth or to pack with you to prevent mid afternoon energy crashes.. These treats are easy to make using very few ingredients and there’s no baking required. By no means are the options exhausted. This is barely a taste of what is possible.

I just want to get you salivating over these coconut oil recipes in the hopes you’ll get inspired to look around at other whole food blogs for decadent coconut oil treats or at the very least try just 1 of these recipes.

Want to know what the best part is? They can all be made in 5 to 10 minutes. And who doesn’t have 5 minutes?

Unbelievable Almond Butter Banana Fudge

Big words, I know, but they are soooo good. A little addictive, sure, but we keep them in the freezer and take small 1 inch by 1 inch cubes for treats. They also make a great treat for the holidays.

Coconut Oil Chocolate

Now this is just a basic and simple recipe. The best part about this recipe is that it’s a jumping off point for your creativity and your tastes. You can add any flavor you like using extracts or oils. You can add any mixture of nuts or seeds or even dried fruit. I’d love to hear about your favorite chocolate variations.

Almond Power Bars for Non Lazy People (DF, Gr Free, Refined Sugar Free)

Out of all the bars and treats we make this one takes first place, with the pecans bars coming in right behind. When I eat these, I feel like I’m eating a Nanaimo Bar or a layer bar of sorts, but with none of the work. They pack a caloric punch, but if you like to move, it won’t be a problem.

 

5 Minute 4 Ingredient Power Bars (DF, GF, GrF, Sugar Free, Vegan, Raw)

I love how flexible these are. Really you could add anything to them flavor wise, nut wise, seed wise, even change the dates to another dried fruit (like apricots, raisins or cranberries) that will bind these into a bar. You can also add healthy additions to it like Maca Powder or ground chia seeds. There are so many options!

Maple Pecan Bars (GF, DF, Refined Sugar Free, Vegan, Raw)

These are delicious. I don’t know what else to say. They are also the ones my husband will typically make if he’s to choose from all our energy or power snacks for a ski day. They don’t hold up as well as some of the other ones by being smashed around by shovels, probes and random backcountry ski gear, but they are really easy to make. Any recipe that tastes delicious and I don’t have to make is a winner in my books. Just saying it’s nice not to be in charge of always making the snacks.

Bonus!

This one’s a bonus recipe. It’s made with apricot puree, but with all the pumpkin pure recipes floating around out there (this one’s by Katie at This Chick Cooks), it could be a simple substitution. I can’t see why this couldn’t be made with pumpkin puree, a little sweetener and cinnamon, nutmeg….sorry about that. Day dreaming.

Anywho, it’s delish, and if you happen to have apricots kicking around and a little extra time, it’s worth a go.

    well, since i ‘heart’ coconut oil as much you France…it is is in the vast majority of my recipes! I have a raw lemon tart (Hail Merry Knock-Off), raw chocolate macaroons, and peanut butter cups with all with coconut oil as a start ingredient. Seriously though, I think over half of my recipes contain it!

    Amazing that most recipes are for sugary junk foods and not real foods, which actually cancels out the good of cocoanut oil!
