 It’s no secret that a majority of people out there have one of these three New Year’s resolutions or goals.

Lead a healthier lifestyle.

Lose weight.

Eat better.

That’s where this salad comes in. It can help you fulfill each of those with a simple 2 ingredient salad and a simple vinaigrette. Eating more veggies are crucial to good health, can help you lose weight and are part of a healthy lifestyle, yet veggies seem to be less appealing in the winter. Winter vegetables don’t get the same attention that spring and summer veggies get. But there are some fabulous vegetables that are easily accessible and inexpensive all year round. And I hope that this recipe will help the simple cabbage get a little more attention and help you reach your goals.

Asian Soba Noodles with Purple Cabbage & Peanuts

While visiting my sister in Edmonton last week I had the pleasure of making a version of this salad. She is now the proud owner of one of my favorite cookbooks, Whitewater Cooks At Home, by Shelley Adams (sorry peeps, not sure if this is available in the States). She wanted to try some recipes together and hadn’t had much of a chance to make anything out of it. This salad was a delightful surprise and one that will grace our table over and over. In fact we’re taking the leftovers with us for a healthy picnic on our way over to Tofino to go whale watching this weekend.

I’ve now made it 2 more times (in less than 10 days!), but I made some changes both times. Don’t get me wrong, the original recipe was delicious, but the salad dressing has a lot of oil and makes almost 2 cups of dressing! We used just over a 1/4 cup leaving us with a ton leftover.  I decreased the oil and substituted this for that, and came up with a recipe that makes just enough dressing for the salad with none left over. I also added the veggies since it was basically just noodles.

I got to have my veggies!

Asian Purple Cabbage Salad with a Creamy Cilantro Vinaigrette (no dairy)

Do you know a good name for coleslaw other than coleslaw?

There might not be one – which is really too bad – because coleslaw has so much potential and quite a bit of flexibility. It also packs a ton of nutrients in one small package. Too bad the name isn’t so attractive.

Coleslaw and potato salads are those two quintessential salads for any successful BBQ. But not the nasty kind you get from the grocery store with all the questionable ingredients, overly drowned with nasty dressing, so no vegetable flavor remains.

No. Not that kind.

Sticky Asian Beef Ribs and the Giveaway Winner!

I just realized with all these meat posts lately that I’m due for a vegan meal of sorts. Next one I promise!

First though is this simple enough rib recipe that is a nice departure from the bbq beef ribs or the braised beef ribs done in red wine and onions. The reason this recipe is fun, is that ribs aren’t necessarily required. Any braising cut of meat would work allowing for a pulled Asian Spiced Beef for use in a host of other recipes like these and these. The inspiration came from So Many Recipes. I only just changed a few things but it still looks very much like the original.

I’m so happy I tried it. This is the type of recipe that can be made once and and then use the leftovers all week long to inspire a host of other meals. For this particular rib recipe, I decided to use it like a beef bugolgi, serving it with sauteed cabbage and rice (sprouted brown rice). We’ll be able to use the left overs to make lettuce wraps and Vietnamese style noodle bowls. And wouldn’t you love to serve them in these?
