Who loves snacks? I do, I do. Okay, I’m singing a little song in my head, but really, who doesn’t want easy, convenient, healthy snacks that they know are good for them and made from real food?

We’re all busy people with busy lives. One of the things that most people struggle with is having great tasting, “good-for-you” food that they can take with them on the go. Eating real for breakfast and dinner is pretty straight-forward, but it’s the in-between meals that we sometimes get stuck on. Also, the dreaded “hanger” has a way of luring us into grabbing convenience food that isn’t good for us or for the kiddos. I should NOT post THIS!

I’m sorry. I apologize. It is rude to post this. But it’s rude not too. I’m suffering from the conundrum. I have been agonizing over it for a while. It’s my friend’s birthday ( I have a ton of Gemini friends not surprising since I’m Gemini…the eternal search for my twin) and I could not come up with anything special enough for her but this. I was not limited with anything like dairy free or gluten free, so I could run free like a free range chicken (no eggs were harmed in this demo) and this is the recipe I could not shake.

Now, once you have the base recipe, you can pretty much do anything you like. Add nuts or add liqueur. A lemon white chocolate would also be lovely. I have made this with pistachio orange cream. An Amarula cream would be ridiculous. I can hardly handle the original, so I don’t venture too far away.

Mexican Chocolate Cake with Coffee Cream

I’m always looking for fun chocolate recipes since that is one of our favorite weaknesses. After a visit to a local Mexican restaurant, I was inspired to make a Mexican Chocolate Cake. Tita’s is not your traditional style Mexican restaurant and they don’t try to be. They offer a fun twist on some favorites and most dishes are on the lighter side. If you have a few minutes I encourage you to take a minute to click on that link and check out the “about” page. Needless to say, I’m happy that it’s only a short drive away.

Some of the highlights of the night included an amazing beer they have brewed just for them and a hibiscus margarita.  A surprisingly lovely pale ale with just enough hops to make it a “go to” beer, especially with food. I had a brilliant tostada topped with black beans, feta, grated carrots and beets. Very fresh and light yet deceptively filling. I don’t remember the names of our mains but they were excellent as well but my husband raved about the Mexican Chocolate Brownie. The best way to describe the flavor is to think of a cinnamon bun with an over load of brown sugar and cinnamon and to mix it with a dense, deep, dark chocolate.

Red Velvet Fudge Cake aka Beet Cake

Trial and error! Surprisingly it’s the error that we liked best. It’s funny how some of the best recipes are found by mistake. I forgot the 2 tsp of baking powder in this recipe until it was already in the oven and too late to fix. Though it was lovely with it, much lighter and fluffier, but without it, it was pure decadence. Fudgy, dense, rich and coat the teeth black with dark chocolate. Not exactly healthy right? Well there’s always wiggle room when the rest of the meals are balanced. We reduced the butter/oil content drastically and added organic, no sugar added apple sauce instead. The beets add a rich earthiness that pairs perfectly with a dense chocolate cake. Though it may seem like this cake has a lot of sugar, you won’t find this dessert too sugary or sweet.

I think the cake speaks for itself so I will leave it to you to try.

DECADENT Chocolate Cheesecake

Ever feel like you’d like to make a lovely tasty DECADENT sweet “something” but know that you really shouldn’t since then it will be in the house and the temptation for an entire week is too much to handle? So in the end you reach for a stale Oreo cookie. You feel unsatisfied and a little hard done by.

What could possibly make chocolate more fabulous than it already is? Now, I don’t mean the vast assortment of stuff a person can add to chocolate that makes it yummy. The key word here is MORE fabulous. What makes cream cheese more fabulous as well? You guessed it. The perfect merriment of flavors are found in chocolate cheese cake.
