Homemade Baileys


Today I wanted to share this fun recipe that my girlfriend and I make around this time of the year (it’s her family recipe).

I highly recommend making this with a friend. It’s a fun way to spend an hour on a Saturday afternoon or even evening.

Now it’s been awhile since I’ve posted a “naughty but nice” recipe, and as Christmas approaches this one is timely. It makes a nice hostess gift or one for your coworkers. It’s not only simple but once you’ve tried this you’ll never buy it again. It makes the store bought stuff taste watered down and almost synthetic.

We usually make a double batch, because I give a lot of it away.

Homemade Baileys

  • 1 can sweetened condensed milk
  • 3 cups half and half
  • 3 eggs
  • 1 tsp Cocoa
  • 1 tsp instant coffee
  • 1 tsp cinnamon
  • 2 to 4 Tbsp of boiling water
  • 1 1/2 cups whiskey

In a large bowl or jug, whisk together the cream and sweetened condensed milk until the two are smooth and well combined. You’ll need two smaller bowls for the next step. In one bowl, whisk together the eggs. In the other bowl add the instant coffee, cocoa and cinnamon with just enough hot water to form a runny, smooth paste. Add the eggs, chocolate mixture and whiskey to the cream. Whisk all the ingredients together until well combined. Using a sieve, pour the homemade Baileys through the strainer to strain out any of the lumpy egg whites that might not have blended in properly. What you’re left with is perfectly smooth and rich tasting Baileys. Pour the mixture into pretty bottles and refrigerate.

This baileys will last for at least 3 weeks refrigerated and maybe a lot longer, but there’s usually none left after 3 weeks to test the longevity.
