Keep it Real Thursdays – Unbelievable Quinoa Buckwheat Granola (GF, DF, VG)

My best friend in the whole wide world is visiting me this week and I’m super excited. We have a camping trip planned to check out Salt Spring Island and I’m really stoked. As a result we need easy no fuss breakfast solutions. What better camping breakfast food (and anytime breakfast food) than granola?

Why I love granola:

  • It pack easily
  • Keeps well in an airtight container
  • It is nutritiously dense
  • The ingredients are really flexible
  • Its easy to make
  • Can be eaten as a snack as well as for breakfast
  • It taste freaking amazing

Keep It Real Thursdays – Grilled Peach, Lentil and Parsley Salad

Having cooked lentils in my fridge has become a time management tool of mine. It allows me to put salads, soups and side dishes together in minutes. Take this 3 minute salad for example. With lentils on hand, I can put super healthy meals together in less time than it takes to go through the drive thru.

Now this is not a 3 minute salad, but if you chose not to grill the peaches or toast the hazelnuts, this salad comes together in less than 5 minutes and is also delicious. If you choose to grill the peaches and toast the hazelnuts on the grill it’s still a fabulously nutritious meal that not only impresses but comes together in less than 15 minutes. Not bad, right?

I recently read a blog post from some blog called… I don’t remember exactly, but it was something like “healthy and thin” or was it “healthy and skinny?”

I ended up there because I clicked on a photo through Pinterest for some peanut butter pie thingy (when I’m mad I barely speak in real English so bear with me). I’m a sucker for peanut butter desserts. It’s a real weakness. But it has to be made with real ingredients. Boy was I disappointed.
