In my books, the best way to get anyone to eat their fruits and veggies is to put it in a salsa. It’s like it’s not even a fruit or veggie anymore. This recipe made about 6 cups of salsa and is virtually guaranteed to be gone in a matter of days (and there are only 2 of us in our household). Not that either of us have a problem getting our plant based nutrients in, but if you happen to have a loved one in the family that struggles with that, try this little trick out.
