Honey Dew and Yellow Pepper Salsa

In my books, the best way to get anyone to eat their fruits and veggies is to put it in a salsa. It’s like it’s not even a fruit or veggie anymore. This recipe made about 6 cups of salsa and is virtually guaranteed to be gone in a matter of days (and there are only 2 of us in our household). Not that either of us have a problem getting our plant based nutrients in, but if you happen to have a loved one in the family that struggles with that, try this little trick out.  This theory goes down the shitter of course if it’s served with tortilla chips, but read on and see all the fun ways to use this sweet and spicy salsa.  To be honest,  I don’t even care for honey dew melon that much, but if someone had originally introduced us this way we would have been BFF.
