TV Tuesday #30: How To Cook Millet Perfectly Every Time

Have you ever made millet? It’s a fabulous gluten free grain that not only tastes delicious, but is easy to make and can be used in a ton of different ways.

If you’ve tried cooking it before, did you get a light, fluffy texture? A mild and nutty taste?

If you’re anything like me, your first few attempts may not have been stellar. My search on the internet led me to instructions like add X amount of water for X amount of dry millet. Simmer covered for X amount of time.

The problem was every website had different water measurements and cooking times. How is that possible? Sure if one is making a porridge from millet it will be different than directions for a “rice” like side dish, but that wasn’t the case here.

This time of the year is especially challenging for most people when it comes to eating healthy. Decadent food is always on offer and healthier options are rarely available. Exercise usually wains off and eating sugary, fatty foods goes up. Not a good equation for healthy hearts, bodies or minds. Carrot Millet Muffins With Currants

I think most of us want to believe we make good choices about our food. Like most people, we try to make proper substitutions when we can and make choices about what we eat based on our activity levels and what type of work we’re doing. This is one of those recipes where I made substitutions where we could, to maximize the nutrition to the best of our ability.

This was a recipe inspired by Mollie Katzen. Her original recipe is for millet muffins. I thought the idea of adding raw millet to a muffin to add a “crunch” sounded like a fascinating idea. I was intrigued. Everything she does ranges from the ranks of good to great and I have yet to have anything I wouldn’t repeat. These are no exception, even with all the substitutions.

The WWC was started by Sanjeeta at Lite Bite as a way to explore ways to incorporate more whole grains into our everyday diet. I chose to feature millet at lunch. Millet Pomegranate Salad with a Basil Chimichurri Dressing


I’ve yet to have the pleasure of traveling to Argentina, but my husband, Joshua, was there in 2005, and one of the things he’s always raved about – besides the amazing beef – is the Argentinian magic sauce known as Chimichurri.  It’s a green sauce made of parsley, olive oil, chili peppers and a few other ingredients, that is used on meats and breads. And it’s magic. Seriously. Magic.

I thought it would be fun to take the Chimichurri idea and apply it to a millet salad since I’m hosting the Wholesome Wholegrain Cooking event this month and the topic is Millet at Lunch.  By the way, have you submitted your Millet at Lunch recipe?
