It’s a work day for hubby and let it be known he has a very physical job and not a lot of body fat. So we focus much of our energy on making sure he has a good balance of protein and carbohydrates in his diet. Boring right? Well, the background info may be, but the recipes we come up with to deal with this challenge are not boring. I’m always looking for interesting ways to either alter more traditional dishes or ways to up the protein component of the meal. Since we eat vegetarian at least 3, maybe 4 times a week, it’s even more important for him that the balance is there.
So to accompany our steak, we had parsnips and a bean mash. I can’t begin to tell you how amazing these parsnips smelled. The whole dinner was very tasty but if you ask me, the vegetable was definitely the highlight.
