TV Tuesday #27: How To Make Tasty Vietnamese Fresh Rolls

Look up fresh rolls and you’ll get all kinds of possible names for these tasty little 5 minute lunches/dinners. They might be called Goi Cuon, Vietnamese Spring Rolls, Summer Roll, Vietnamese Salad Roll, Cold Roll, or as I like to call them, Fresh Rolls.

I like them because, like sushi, I feel that I can stuff them with just about anything, even if it’s a little non-traditional. I can whip them up in about 5 minutes and they taste great. They can vary in filling depending on what individuals like, meaning every single one of them can be different.

We set up a little station with the cut up veggies, omelet or meat, rice or bean noodles (absolutely optional) and lettuce. We roll up a plate of these in minutes and sit down to a super relaxed “convenience” meal, and the drive thru was not required.

I have this dear friend. She’s the only other person I know that loves peanut butter desserts more than me. I know I can always count on her to help me search out the next ‘best’ peanut butter pie recipe. We have a bond.

We met over the topic of dogs, we each had one. Mine with major behavioral problems, hers an angel. We later discovered we both loved scotch, long walks, a good Americano, good food and kind hearts.

Chocolate Peanut Butter Monkey Protein Bars

It’s that time again to stock our coffers with more protein bars. Since peanut butter and chocolate is my favorite flavor combination when it comes to anything sweet, it was a no brainer for today’s bars.

Before I go into protein bars, I plan to bore you with France Adventures. I haven’t been creative in the kitchen for ages (ok, a few days) and I am feeling like it’s time to get crazy. Last week I spent all my time trying to use up everything we had in the fridge before going away for the May long weekend. The good thing is about that is that it forces me to be creative, hence the previous post on hazelnut shortbread cookies. They are very easy to make, take very few ingredients, all of which I always have on hand. On our arrival back, I worked solid, with no time to go grocery shopping or really think about anything other than getting some sleep. This also has it’s perks since we get to eat delicious leftovers that I stocked our freezer with in the previous week leading up  to our mini vacation.
