What’s For Lunch?

I love those days when I’m digging like a ferret for some kind of food to eat for lunch and something so wonderful comes out of it. It doesn’t happen often since we usually have loads of leftovers from the night before.

I bought a large bag of pears a couple days ago to make a Pear Galette of sorts. They look so pretty in their bright green dress that it’s hard to resist biting into one even though it is far from being ripe. Solution found! I can’t complain about sitting in the sun, looking at the ocean and the snowy mountains. Life is grand!

Pear, Ginger and White Chocolate Muffins

Who wouldn’t want to wake up to these muffins in the morning? Don’t they sound decadent? But of course I had to include whole wheat flour and include yummy rolled oats. I loved the idea of pears and ginger together but the recipe that inspired this creation had a typo because they didn’t work out at all (in hindsight I should have caught the error: 7 1/2 cups of flour to make 24 muffins). So I started from scratch and this recipe was much better.

I don’t often post breakfast recipes here, since I contribute to Enjoy Life with Breakfast. Occasionally, I just have to share a recipe with all of you right away. With the weekend coming up, I can’t imagine a more delightful muffin to savor, warm out of the oven with a cup of tea, as you ease yourself into a lazy day.

French Toast stuffed with Pear, Camembert and Avocado

I know it might seem a little different, but it comes as no surprise that pear and camembert go well together and who would turn their nose up at avocado? This is one of those recipes that came out of necessity more than creativity and I’m glad it did. I think we can all say that we look around the kitchen, from time to time and find ourselves thinking up ways of using up food in an odd combination before it goes bad. This was one of those. I had a few pears on the verge of going bad, an avocado screaming at me saying, “EAT ME” (true story) and some day old (ok 3 day old) whole wheat French style bread. The sweetness and crunch of a bosc pear balances perfectly with creamy bold camembert and the avocado adds a buttery creaminess that is lip smackingly fabulous. This is so easy to put together and presents so beautifully. Maybe you’ll even be tempted to try this with fresh ingredients! If the avocado is too scary, that’s ok, it’s fab with just pears and camembert too! However this recipe does beg to be tampered with, so feel free to get creative. Let me know what fun concoctions you come up with.
