Not Your Grandma’s Potato Salad

Nothing too fancy here folks…just potato salad. This one dosn’t have any heavy dressings but rather has flavor from tomatoes, capers, dill and good quality olive oil.

It’s not your grandma’s potato salad of course. I don’t have any of the ingredients to make that kind of salad, so I decided to try something a little different instead. This Roasted Potato Salad comes with oven roasted grape tomatoes (which adds a nice sweetness), crispy capers, fresh dill and crispy spinach leaves.

This is a simple, yet complimentary flavor pairing that is sure to win you over. No need for heavy creamy dressing when you’ve got olive oil, lemon juice, smoked paprika and dill.

Pomme Anna with Celeriac

I have been wanting to make Pomme Anna for quite some time.  Pomme Anna is a simple side dish of layered sliced potatoes with salt, pepper and a little butter. I love the simplicity and the look of this dish. I received a fabulous cookbook a couple of years ago (The Food of France) as a Christmas present and once a month I pick a fun recipe to try from it.  One of my most recent meals from this book was Beef Carbonnade. Basically it’s a beef stew cooked in beer and served with a crusty baguette and dijon. Of course I had to try their version of Boeuf Bourguignon. It was delicious.

I’ve also got my eye on making a Rabbit Fricassee in the near future. They have a prune and walnut stuffing that looks absolutely delectable and a herb sauce for fish made with parsley, chives, capers anchovies and hard boil eggs that is almost like a paste to spread on a fillet. Oh gosh, I could go on for some time.
