We’re all busy people with busy lives. One of the things that most people struggle with is having great tasting, “good-for-you” food that they can take with them on the go. Eating real for breakfast and dinner is pretty straight-forward, but it’s the in-between meals that we sometimes get stuck on. Salmon Kabobs with Pine Nut Salsa and Sprouted Spelt Naan Bread

Sometimes it just nice to have a simple meal without all the bells and whistle. The simplicity of a rich fish, nut salsa with some naan bread and yogurt cheese was the the perfect compliment to a warm winter afternoon. I was able to strike up the barby, get some naan bread going and grill up some fish. Yes I made my naan bread on the bbq! What a lovely way to take a break from the day on a Saturday afternoon, sitting on bar stools at the kitchen counter, the sun streaming in. My honey bee had gotten home from skiing and it was a lovely way to just settle into a nice afternoon.

Lemon Cream Spelt Scones

I am taking part in the Wholesome Wholegrain Cooking Event hosted by The Girlichef and started by Lite Bites as a way to explore healthy whole grains to boost nutrition in everyday meals. Well that just sounded right up my alley, when I heard about it, and a fun project to take part in. It’s taken me awhile to develop this recipe since I’ve tried it several ways and haven’t been ecstatic with the result. But alas, I have found the recipe that was a delight at every bite.

I am excited about this new Lemon Cream Spelt Scone recipe. They are light and have a fantastic crunch from the added cornmeal. I recently started using spelt flour instead of whole wheat flour or whole grain flour and I love the results. You’ll be surprised at how well they substitute for one another.
