I feel so spoiled having a such a great butcher in our town. One that not only guarantees that all their meat is organic, has no antibiotics, fillers or chemical and is local, but also offers a selection of grass fed and free range products. To make things even better, they always have a wide variety of house made sausage, made with all natural (no gluten) casings and no fillers. When I saw venison sausage there a couple of days ago I could not resist making a delicious venison stew. This dish can be made with any meat really, so use what you have. The richness the cocoa brings is surprising and comforting. I thought I’d give you all a break from the Moroccan theme I have been on. Well a small break…I probably will be doing something along those lines soon!
