Watermelon Tomato Salad

Oh, sweet watermelon. Juice running down my chin, too much loving to all be contained in one bite. Somehow the whole face gets involved.

I think every kid must have a memory somewhere of leaning over a balcony looking over a lawn spitting their watermelon seeds down below. Juice dripping down each arm all the way to the elbows, then down the front of what used to be a clean T-shirt, and spread from ear to ear (and maybe a little in the hair)…or maybe that’s just me. I’m 35 now and still haven’t mastered the art of eating watermelon without getting it all over the place.

Gosh, I had missed watermelon. Almost as much as I missed regular hot showers and regular garbage pick up…

Refresh Yourself With Watermelon Gazpacho

I have been hesitating to make this soup for some time, hoping it would get hot soon. Though I can’t say it’s hot, it may be as close to hot as we’re going to get. This is my second watermelon purchased specifically for this soup. The first time, I waited so long for a warm day that my watermelon went bad on me. I will not be disappointed again. Kelly from Trinity Nutrition just posted a lovely chilled cucumber avocado soup that sounded amazing. I thought, what the heck, if we have to sit around in sweaters and eat cold soup well so be it! Besides, if warm weather is the prerequisite for cold soup, then I wouldn’t have made a Strawberry Gazpacho for New Years Eve. Look at me breaking unwritten rules!

Watermelon Salad with Lemon Chipotle Oil

This salad has the the perfect balance of sweet and juicy watermelon paired with a smoky citrus oil. This salad is lovely because as long as I have a watermelon and some mint I can make a version of this at any time. The mint really makes this salad and with a little olive oil and some salt and pepper…Voila. But with very few ingredients this salad can go from the ordinary to the extraordinary. I’ve been experimenting with this salad all summer trying to make it fresh and new every time, just to avoid the comment “watermelon salad again?” But this is my favorite version to date. We had some left over lemon chipotle oil from a risotto style barley we make quite often and it will be simple to duplicate since the oil is so easy to make.
