I love dessert, and, honestly, who doesn’t?  The balance of sweet and soft on the tongue. The rich explosion of flavors. The cleansing of the palette. When it’s right, it’s enough to make you go crazy! I whipped up this lemon cheesecake mousse and treated my mouth to an array of sensations. It’s sweet, smooth, delicate and light, but big in flavor and completely satisfying. This simple gluten free dessert is perfect for a small family. Not only is it rich in healthy fats but also uses no refined sugars. Feel free to double the recipe and bake it in a larger pan for a larger group. I don’t like having a lot of sweets hanging around the house so this was the perfect size for us. This dessert serves 4-6 depending on the size of the pieces.

Yogurt Cheese – snack food – breakfast food – desserts and MORE

Some of you may be wondering what to do with any left over yogurt cheese you may have after making the Cardamom and Honey Cremets. The recipe advised to start with 1 1/2 cups of plain full fat yogurt (I started with 2) to get 1 cup of cheese. I always make more because I love having it around the house, but you may have some left over regardless. The reason I love keeping it around is that not only can it be substituted to make lovely desserts, but it is useful in a lot of other ways too.

My favorite way is with olive oil and salt and pepper on a pita. Below it is shown using left over chili oil from my Creamy Chickpea Soup I posted earlier last week.  It is also great with good quality olive oil and a heavy sprinkle of Za’atar. This is how I was first introduced to yogurt cheese, otherwise know as Labaneh (also spelled Labneh).

More snack ideas include adding it in place of cream cheese in your favorite dips or adding it in your creamy salad dressings and mix it with herbs, salt and pepper for a zingy spread.

Honey Yogurt Panna Cotta

Panna cotta is a quintessential Italian dessert defined by its quality of ingredients and simplicity. I have featured panna cotta previously but made it more complex by including cream cheese and lime. I wanted to feature the perfect 5 minute dessert that takes only 4 ingredients to make. The best part is that it includes wholefoods, no artificial sweeteners, is gluten free and requires no baking. It pairs with whatever seasonal fruit happens to be around or can be served with a number of sauces including a sweet red wine syrup. Now that’s flexible.

I decided to make a yogurt panna cotta, so that we could benefit from all the healthy probiotics of yogurt and use only natural unprocessed sugars.  The health benefits of honey are numerous but are only preserved when they are not cooked at high temperatures, making honey the perfect sweetener for this no bake dessert.
