Simple & Perfect Zucchini Radish Salad with Feta

Zuccini Radish Salad I want to stick with simple for as long as I can.

Only summer vegetables offer the possibility of a meal coming together in less than 5 minutes. Potatoes? Nope, don’t like eating them raw even though my grandpa did. Other root veggies, nada, though some are delicious grated raw on a salad like carrots, beets and even celeriac. Lentils and braised meats (as amazing as they are) take time. And though they all have their place, I definitely want to take advantage of this simple time before I start to crave hot soups, stews and braised meats.

Now before you scroll down any further, please don’t let the simplicity of the ingredients fool you. It’s so good in fact, I made it again for lunch!

Maple Pecan Zucchini Brownies (Flourless!) GrF, DF

Zucchini Brownies

You’re probably thinking, “Another brownie recipe?” Ok, maybe not. But it’s true that I don’t post sweets that often. Brownies twice in one month? Crazy. Over kill? I don’t think so. At least not in the current circumstances.

My sweet little dog died yesterday. Shasta was 10. She was rescued at 6 and a half years of age. We hope we gave her a good life, that we did right by her. Gosh, I miss her little face, her little cheesy Dorito smell she gives off when she’s all curled up and sleeping like a log. Her big begging eyes that say “I’m not begging, but if you loved me you’d share.” Not chocolate, of course, though…

Mediterranean Zucchini and White Beans & Something BIG

Something big happened to me yesterday.

Really big.

Wait for it.

I got to go into town. Yup. The equivalent of a lookout obverser winning the lottery (ok, not quite, but pretty darn special). Only being 11 days in…this makes it even more rare. I took full advantage of stocking up on odds and ends I wish I had brought out in the first place and stocked up on fresh herbs (what a treat).

And, I did my laundry…

I really wish I had known that I had a town day in my future before I hand washed 30 individual socks. Let me tell you that little 400 square foot cabin looked pretty ridiculous. 30 socks drying off clothes lines hanging across the living room from the ceiling.

In town, I drank a beer. It was fabulous. End of story.

Zucchini Salad with Feta, Mint and a Parsley Vinaigrette

There are a few select things that make a recipe a winner in my books. I’m most excited about a recipe when the flavors are spot on, when its easy to put together and when the ingredients are easy to get or are flexible enough for substitutions.

Now, it doesn’t mean that every recipe found on this blog has all of these traits or falls neatly into each of these categories. Some things just take longer than others, that’s just a given. It also doesn’t mean those things aren’t worth making because they take longer either.

That notion would be absurd. Everyone knows that certain things cooked over a long period of time can sometimes bring the flavors to new heights. But quick, easy recipes are essential for most of us leading busier lives than we wish to be living.

Zucchini Basil Salad with Pine Nuts and Pecorino – Ready in 5

Tummy is grumbling. I can feel my hanger (angry because I’m hungry) coming on. The world is a fog. Everyone is annoying and I need to get some food in my belly before the acid in my stomach starts eating through my spinal cord (not literally, but that’s what it feels like).

I run into the house, fling off my coat onto the couch, throw the grocery bags on the counter and start making my lunch.

From grocery bag to table in 5 minutes. Here goes.

I pull out the mandoline, wash my zucchini and basil, and I quickly slice the zucchini by setting my mandoline to 1/16″ thick. I place the pile of zucchini in a bowl, toss with olive oil, the juice of a meyer lemon, plenty of fresh pink Himalayan sea salt, fresh cracked pepper, and I add in some basil leaves and garnish with toasted pine nuts and shaved pecorino cheese. Done.
