Individual Pear and Hazelnut Tart with Lemon Goat Cheese Cream

Pear Hazelnut Tart

What could be more exciting than yummy pear and hazelnut tarts?

Yeah, I agree. Not much. They pretty much rock my world.

But I do have some news that comes pretty close. First, I’ll be leaving for Vietnam in less than a weeks time! Actually, by this time next week, I’ll be on a plane! I am ridiculously excited not only to see my friends that have been living there for 5 years but also for a new adventure, since I’ve never been. Have you been? If you have any recommendations please leave it in the comment section! I’d love to hear from you.

Simple Strawberry Quinoa Salad with Peas and Dill

Strawberry Quinoa Salad 3The real beauty of cooking in the summer is that it is almost effortless. There are so many vegetables and fruits to be enjoyed at the peak of their vibrancy, that very little cooking, prepping or fussiness is required. Don’t get me wrong, I love a braised beef recipe or slow cooked Bolognese. But I revel in the effortless masterpieces one can create with simple seasonal ingredients. They had a bounty of fruits and vegetables for me to pick from, I literally could NOT take a selection of everything home. Since strawberries were just coming off their second field and the peas looks ready to eat on the spot they were my first choice and in essence the inspiration for this effortless salad.

As much as you can call a ratty tatty broken foil pie plate success.

A Chocolate Tart was born. It helps that I actually had the ingredients on hand to make it. Running to the store isn’t exactly an option. So with chocolate and a foil pie plate in hand I now present…

Chocolate Pie. Dat dada dah!

Pan Fried Scallops with Golden Almonds and Creamy Cauliflower

I love date night. Sometimes date night is just me, myself and I. It’s a chance to kick back and relax by myself with an easy meal and a glass of wine. Other times it falls into the more traditional category (aka dinner with another human being). I try to treat myself at least once a week to a beautiful meal that isn’t rushed or stressful. The type a night when you remember to put on some music and light a candle or two and eat with a a proper napkin. Some weeks are better then others, and then there are weeks like this one, where I get to Friday in a whirlwind and wonder where the week went.
