Cranberry Pear Smoothie

Smoothies don’t always have to include berries. By stepping outside the box, there’s a whole world of flavour combinations awaiting you! I thought I’d share my favourite fall smoothies.

Cranberries have become my new ‘go to’ smoothie fruit. I love that they are tart, relatively low on the glycemic index and offer all kinds of anti oxidants. It’s not news that cranberries also help with urinary tract health. For all those ladies out there that get what my sister calls ‘C.U.T.I. ‘ (acute urinary tract infection) pronounced cutie, ‘like you’re such a cutie patootie’. Except a C.U.T.I  is never cute. Cranberries also help promote mouth health by inhibiting mouth bacteria (your hygienist will thank you) and it’s research is showing promising results for cancer prevention.

The Best Summer Dessert: Peaches with Ricotta and Salted Maple Brazil Nuts

These are the dilemmas I was faced with yesterday. Sure dessert for breakfast isn’t one of the world’s big challenges, but most of the world’s problems don’t come together in 10 minutes or please the mouth or stomach as well as this either.

I’m a late comer to ricotta. Not sure why. But once I get fixated on something, it’s hard to shake it. I’m like a dog with a bone until something else gets my attention and I’m onto my ‘new thing’. You don’t need to do anything to ricotta and fruit to make it a sinfully good dessert (which is not sinful at all and I sometimes enjoy for breakfast). A few slices of perfectly ripened fruit, a 1/4 cup of ricotta and the smallest drizzle of honey or maple syrup is all it takes. It is the best summer dessert (or breakfast) that comes together easily in minutes.

Cauliflower Quinoa Cakes with Roasted Pepper and Tomato Sauce

Cauliflower Quinoa CakesMost of the time living out in the bush is not so different than living in town. You know, minus the running water, bathroom, civilization, power. See, not so different. Until you need a grocery store.

Then it sucks. Sucks like wet sand in panties.

Yesterday, I slammed the freezer door, but I didn’t notice that the door had popped back open ever so slightly. Then I proceeded to climb up into my tower for the rest of the day. From 1 pm to 8 pm, my freezer door was left ajar. It was 33 degrees Celcius (that’s about 92 degrees Fahrenheit).

Yeah for me!

I was greeted to a mostly thawed freezer and every thing in my fridge, warm. Not. Good.

Healthy Baked Mac and Cheese (DF option)

My father died 2 weeks ago today.

I left my tower on Tuesday morning, knowing I needed to get home to see him. He wasn’t doing well. In fact, he was starting to spiral downwards. He had the advanced stages of dementia.

I did not get there in time.

That part is going to be hard for me.

But I’m back at the cabin/tower now. I don’t know if I’ve ever been so grateful for a series of rainy days. After 10 days of grief, stress, family drama and so much sadness, I am tired. Really tired. Rainy days are exactly what this girl needs. The radios are quiet, there isn’t any yard maintenance projects to do, and with the cabin being replaced next year, there’s not much to do inside either. I can rest.

Now all I need is a steady stream of comfort food. After all, emotional eating is healthy…right?

Mediterranean Zucchini and White Beans & Something BIG

Something big happened to me yesterday.

Really big.

Wait for it.

I got to go into town. Yup. The equivalent of a lookout obverser winning the lottery (ok, not quite, but pretty darn special). Only being 11 days in…this makes it even more rare. I took full advantage of stocking up on odds and ends I wish I had brought out in the first place and stocked up on fresh herbs (what a treat).

And, I did my laundry…

I really wish I had known that I had a town day in my future before I hand washed 30 individual socks. Let me tell you that little 400 square foot cabin looked pretty ridiculous. 30 socks drying off clothes lines hanging across the living room from the ceiling.

In town, I drank a beer. It was fabulous. End of story.
