The Best Summer Dessert: Peaches with Ricotta and Salted Maple Brazil Nuts

These are the dilemmas I was faced with yesterday. Sure dessert for breakfast isn’t one of the world’s big challenges, but most of the world’s problems don’t come together in 10 minutes or please the mouth or stomach as well as this either.

I’m a late comer to ricotta. Not sure why. But once I get fixated on something, it’s hard to shake it. I’m like a dog with a bone until something else gets my attention and I’m onto my ‘new thing’. You don’t need to do anything to ricotta and fruit to make it a sinfully good dessert (which is not sinful at all and I sometimes enjoy for breakfast). A few slices of perfectly ripened fruit, a 1/4 cup of ricotta and the smallest drizzle of honey or maple syrup is all it takes. It is the best summer dessert (or breakfast) that comes together easily in minutes.

It’s almost impossible not to eat well in the summer. The bounty of fruits and vegetables is endless – all at the height of their flavor. We have been enjoying plums immensely, but today’s breakfast idea will pair great with just about any fruit or berry.

Lemon Ricotta Pancakes! This is the ultimate weekend breakfast if you ask me. Doesn’t fresh seasonal fruit just SCREAM for ricotta!

My first experience with lemon ricotta pancakes was during a stint working for Brad Lazarenko at Culina Restaurant. It was our Saturday brunch special. That was over 10 years ago now, but the memory of it is still rich in my mind.

Broccoli and Egg Pancakes

3 ingredient savory pancakes!

Actually, it’s better than that. 3 ingredient healthy pancakes.

How freakin’ awesome is that?

Now other than their shape, they have very little in common with the North American breakfast staple. In fact, they are almost the opposite. These pancakes will stabilize blood sugar levels instead of sending it through the roof, like your typical dose of diabetes on a plate.

With a base of broccoli and eggs, these pancakes are healthy, veggie packed, protein rich and loaded with omega 3s and totally satisfying. I even threw in a little turmeric for the benefits of curcumin. They also happen to be gluten free, grain free,  and they definitely don’t need syrup.

Savory Roasted Red Pepper Jam

I had a mail delivery yesterday. I hardly see people, so a delivery (people and mail) is like Christmas! The few things I had ordered online arrived yesterday, along with my new workout program from Beach Body. I’m pretty excited to get started. There’s only one problem. I’m on day 18 of being on High or Extreme fire potential. 18 LONG days.

That means that everyday I start work at 7:15, I get a break for 75 minutes (not today though because I had to change the oil in my generator, boo) and then rock it out from 9 am and end at 8 pm? And then there’s 2 dog walks a day, general personal hygiene (no running water or bathroom, that’s more time consuming than you think), and whole food meals.

Time! Oh, elusive time, where art thou?!  I’m sure there are quite a few of you that can relate. So here’s my dilemma. How do I follow a consistent workout program when my schedule changes and there seems to be no time left?

I decided to make a crazy decision.
