Chocolate Tart with Balsamic Stewed Cherries

Chocolate TartI hinted about pie on Tuesday while cooking up chocolate for dinner and once the seed was planted, that’s all I could think about it. So it was with some determination that I ripped the cabin cupboards apart to find some kind of a pie plate. I came up with one mangled foil pie plate! Success. As much as you can call a ratty tatty broken foil pie plate success.

A Chocolate Tart was born. It helps that I actually had the ingredients on hand to make it. Running to the store isn’t exactly an option. So with chocolate and a foil pie plate in hand I now present…

These are the dilemmas I was faced with yesterday. Sure dessert for breakfast isn’t one of the world’s big challenges, but most of the world’s problems don’t come together in 10 minutes or please the mouth or stomach as well as this either.

I’m a late comer to ricotta. Not sure why. But once I get fixated on something, it’s hard to shake it. I’m like a dog with a bone until something else gets my attention and I’m onto my ‘new thing’. You don’t need to do anything to ricotta and fruit to make it a sinfully good dessert (which is not sinful at all and I sometimes enjoy for breakfast). A few slices of perfectly ripened fruit, a 1/4 cup of ricotta and the smallest drizzle of honey or maple syrup is all it takes. It is the best summer dessert (or breakfast) that comes together easily in minutes.

We don’t often do “family friendly” meals or talk about family stuff here at Beyond The Peel. It’s just me and my husband after all. My biggest food challenges are trying to get him to like a select few “offending” vegetables – vegetables I love but I haven’t quite gotten him to fall in love with. That must seem pretty minor to the average mom or dad. I recently received the Real Food Recipes & Resources eBook Bundle, and I thought it would be perfect at filling a need for family friendly meals that I simply can’t meet in my everyday posts.

This is an awesome ebundle of cookbooks for families. Each book has great kid friendly recipes AND those following allergy restricted diets or specialized diets. With 250 recipes (or so) combined it’s a heck of a deal. There’s even one that is specifically designed for kids to get them involved in the kitchen. I can only imagine how priceless that would be.

I may not have kids, but with one of the ebooks being an ice cream cookbook, who needs kids? I mean ice cream is for everyone right!?

You’re probably thinking, “Another brownie recipe?” Ok, maybe not. But it’s true that I don’t post sweets that often. Brownies twice in one month? Crazy. Over kill? I don’t think so. At least not in the current circumstances.

My sweet little dog died yesterday. Shasta was 10. She was rescued at 6 and a half years of age. We hope we gave her a good life, that we did right by her. Gosh, I miss her little face, her little cheesy Dorito smell she gives off when she’s all curled up and sleeping like a log. Her big begging eyes that say “I’m not begging, but if you loved me you’d share.” Not chocolate, of course, though…

Unbelievable Chocolate Coconut Brownies

Is it bad to eat 6 brownies in between lunch and dinner?

It can’t be good right?

Unless of course they are delicious brownies. After all, I have had some bad brownies in my time. Some dried out wannabe version of a brownie. Crumbly, flavorless. or worse, “too sweet they stick to the teeth and I need 2 glasses of milk to swallow it down” brownies. Then there are the failed attempts at making healthy brownies. There are a surprising amount of those out there. Blah. Nasty. I have been not only the victim of said failed brownies, but the creator as well!

As you might already know, not everything I make is considered healthy. Especially when you consider all the different food circles that exist out there. And you know what? That’s ok by me. Everyone’s got their own version of what is healthy. Some say paleo, others say primal, or vegan, vegetarian, gluten free, grain free, traditional diets (WAP), allergy free…the list goes on. Mine is simply to stick to real food/whole food and try for moderation.
