Mint and Lime Mahi Mahi with Dill Yogurt Sauce

As my season at the tower is coming to an end, I have so much to be grateful for. Overall, it was a great season.

Translation. The bugs weren’t too bad. Seriously.  Such. A. Blessing.

But there was other stuff too. The noise they told me about; coming from all the industry that has popped up around the tower, wasn’t bad and some days almost none existent. Bonus!  The road coming out to the tower has been well maintained so going into town was more regular than it had been in the past. Translation? Running out of food was rarely a problem except for that one time where I panicked. But I learned my lesson and realized I could get through just about anything. I managed to have decent internet out at the cabin which is saying a lot since it’s in the middle of nowhere. It came at a cost…but I’m still grateful. After all, it’s the reason I was able to share all my creations over the last 5 months with all of you.

Simple Strawberry Quinoa Salad with Peas and Dill

Strawberry Quinoa Salad 3The real beauty of cooking in the summer is that it is almost effortless. There are so many vegetables and fruits to be enjoyed at the peak of their vibrancy, that very little cooking, prepping or fussiness is required. Don’t get me wrong, I love a braised beef recipe or slow cooked Bolognese. But I revel in the effortless masterpieces one can create with simple seasonal ingredients. It’s vibrant food at it’s best, doing all the work! There’s no need for heavy sauces or complicated salad dressings to mask the taste of “less than fresh” vegetables.

Take this summer strawberry quinoa salad for example. With summer still clinging onto every cell, the peas, strawberries and dill come from a local organic farm I recently stumbled across in this neck of the woods (the boreal to be exact). They had a bounty of fruits and vegetables for me to pick from, I literally could NOT take a selection of everything home. Since strawberries were just coming off their second field and the peas looks ready to eat on the spot they were my first choice and in essence the inspiration for this effortless salad.

Tostadas with Cocoa Spiced Pinto Beans and Peach Mint Salsa

Today was a day to mix comfort, warming foods with the fresh and bright flavors of summer. Sure I could have made pie….

Shoot. I should have made pie!

No matter, this is better than pie. Chocolate for lunch anyone? Oh yeah baby!

Enter Tostadas – which I love.

Essentially, tostadas are the perfect platform for just about any tasty topping. These chocolate beans are warm, spicy and almost creamy. There’s a kind of earthiness to them. Top the whole dang thing off with the bright juicy flavors of peach and refreshing mint. I can guarantee you won’t be thinking about pie. If you make your own tostadas, you can avoid the deep frying oil too. If you’d like to make your own, bake tortillas in the oven at 375 F for 10 minutes or so. They turn out perfectly crisp without the rancid vegetable oil.

Cauliflower Couscous Salad with Plums & Prosciutto

Today was one of those days when I wanted a couscous salad. Without any couscous to be had, I made do. I’d used the idea of ‘ricing’ cauliflower before and I’d seen it used in a risotto (brilliant but I have yet to try it!), as rice and as couscous. There seemed to be no time like the present to try it. It helped that the pressure was on, because I had a cauliflower going bad in the fridge. Kinda like the time I made this. It was one of those ‘use it or lose it’ moments.

The other ingredients in this recipe come from a most brilliant surprise. A visit from my sister! You should know, out here any visit at all is really nice, but a visit from a sister is truly special. Like Christmas! She even came bearing gifts! Of course in my house, the best gifts of all tend to be food and wine.
