Chocolate Tart with Balsamic Stewed Cherries

Chocolate TartI hinted about pie on Tuesday while cooking up chocolate for dinner and once the seed was planted, that’s all I could think about it. So it was with some determination that I ripped the cabin cupboards apart to find some kind of a pie plate. I came up with one mangled foil pie plate! Success. As much as you can call a ratty tatty broken foil pie plate success.

A Chocolate Tart was born. It helps that I actually had the ingredients on hand to make it. Running to the store isn’t exactly an option. So with chocolate and a foil pie plate in hand I now present…

Cauliflower Quinoa Cakes with Roasted Pepper and Tomato Sauce

Cauliflower Quinoa CakesMost of the time living out in the bush is not so different than living in town. You know, minus the running water, bathroom, civilization, power. See, not so different. Until you need a grocery store.

Then it sucks. Sucks like wet sand in panties.

Yesterday, I slammed the freezer door, but I didn’t notice that the door had popped back open ever so slightly. Then I proceeded to climb up into my tower for the rest of the day. From 1 pm to 8 pm, my freezer door was left ajar. It was 33 degrees Celcius (that’s about 92 degrees Fahrenheit).

Yeah for me!

I was greeted to a mostly thawed freezer and every thing in my fridge, warm. Not. Good.

Healthy Baked Mac and Cheese (DF option)

My father died 2 weeks ago today.

I left my tower on Tuesday morning, knowing I needed to get home to see him. He wasn’t doing well. In fact, he was starting to spiral downwards. He had the advanced stages of dementia.

I did not get there in time.

That part is going to be hard for me.

But I’m back at the cabin/tower now. I don’t know if I’ve ever been so grateful for a series of rainy days. After 10 days of grief, stress, family drama and so much sadness, I am tired. Really tired. Rainy days are exactly what this girl needs. The radios are quiet, there isn’t any yard maintenance projects to do, and with the cabin being replaced next year, there’s not much to do inside either. I can rest.

Now all I need is a steady stream of comfort food. After all, emotional eating is healthy…right?

Savory Roasted Red Pepper Jam

I had a mail delivery yesterday. I hardly see people, so a delivery (people and mail) is like Christmas! The few things I had ordered online arrived yesterday, along with my new workout program from Beach Body. I’m pretty excited to get started. There’s only one problem. I’m on day 18 of being on High or Extreme fire potential. 18 LONG days.

That means that everyday I start work at 7:15, I get a break for 75 minutes (not today though because I had to change the oil in my generator, boo) and then rock it out from 9 am and end at 8 pm? And then there’s 2 dog walks a day, general personal hygiene (no running water or bathroom, that’s more time consuming than you think), and whole food meals.

Time! Oh, elusive time, where art thou?!  I’m sure there are quite a few of you that can relate. So here’s my dilemma. How do I follow a consistent workout program when my schedule changes and there seems to be no time left?

I decided to make a crazy decision.

Brie and Walnut Portobello Mushrooms with a Tomato Balsamic Emulsion

I’m all alone for dinner. Yup and I’m excited! In my house that means making all kinds of yummy food that wouldn’t really go over well, like popcorn for dinner for instance. That’s the type of thing you do when you’re alone. One of my favourite things in fact. Go figure. So while the hubby is away I eat all the foods I love.

Enter portobello mushrooms. I love them! But to serve it as the center piece of a meal, it wouldn’t really fly.

While I have this time to myself, I plan to get my fill of portobellos (2 for me and no sharing, yippee), eggplants (I bought 2), olives (I bought 3 containers!) and stinky blue cheese, swoon.
