TV Tuesday #29 – 10 Minute Homemade Hot Sauce

As part of my own personal whole food journey, I find that one of the hardest thing to replace are convenience items like pre-made sauces (any hot sauce addicts out there?). It’s gotten waaayyyy better, but in the beginning it was so challenging in fact, (at least that’s how I felt) that it almost made the whole food thing a bust. If something is too hard or too time consuming or too much of a pain in the butt, we often quit.

Ok, maybe it’s only me, but I actually don’t super like to be challenged. Ok, that’s not entirely true. When I’m rested, not stressed out, have lots of time, challenges..bring ’em. But after I’ve had a long day at work, I’m tired, we have a million and one obligations…not so much.

TV Tuesday #12 – Aioli Versus Mayonnaise

So what is all the fuss about aioli?

I’m sure you’ve seen it on every restaurant menu out there. Isn’t it just a big blob of mayo?

Well yes and no. Chances are, if you’re at a regular ho hum restaurant, it probably is just mayo with some spices or garlic added to it. Though its very similar to mayo in the fact that it uses an egg yolk, an acid (lemon juice or vinegar) and oil, one big thing sets it apart. Flavor! Aioli is made with olive oil, which is very flavorful, and mayonnaise is made with a light neutral tasting oil like canola. As we strive to be a whole food family, canola oil is kinda out (read an interesting article here). Good news is that it’s full flavored partner, aioli, made with olive oil, is IN!

TV Tuesday #10: How Make Maple Balsamic Reduction

One of the most important aspects of cooking with real food is making it taste amazing. Often our palettes are use to heavily seasoned food (to hide all the preservatives), so foods in their natural state can taste bland to some.

As you become more accustomed to the natural flavors not much else will be needed to make them shine. That’s the beauty of this simple sauce: maple balsamic reduction. It’s not only great in helping people bridge the gap to natural foods because it adds big flavor, but great for whole foodies because it allows the flavors that naturally occur in wholesome food to shine. I can’t emphasis enough the importance of having a repertoire of easy to make sauces, or sauces that are on hand and deliver a ton of flavor with very little time.

Homemade Minted Pesto and Fond Kitchen Memories

My mom is visiting from California and she is one of the two women who have influenced my culinary life. France, my wife, is, of course, the other. The other day, after we’d been up at the mountain skiing all day, the three of us tag teamed a fantastic dinner: Lamb Chops with Minted Pesto with Mashed White Beans and Sweet Potatoes, and a Roasted Beet Spinach Salad.

Oh, the hardships of my life.

France came up with the idea for a minted pesto, which I’d never made before, and I was responsible for making it happen. A little of this and a little of that, toss it in the food processor, and bam, we had ourselves a delightful sauce to top off the lamb chops.
