Mediterranean Zucchini and White Beans & Something BIG

Something big happened to me yesterday.

Really big.

Wait for it.

I got to go into town. Yup. The equivalent of a lookout obverser winning the lottery (ok, not quite, but pretty darn special). Only being 11 days in…this makes it even more rare. I took full advantage of stocking up on odds and ends I wish I had brought out in the first place and stocked up on fresh herbs (what a treat).

And, I did my laundry…

I really wish I had known that I had a town day in my future before I hand washed 30 individual socks. Let me tell you that little 400 square foot cabin looked pretty ridiculous. 30 socks drying off clothes lines hanging across the living room from the ceiling.

In town, I drank a beer. It was fabulous. End of story.

TV Tuesday #42: The Superfood You Should Consider Eating

Hint: It’s not the yams…It’s on the fries!

Have you been hearing the term superfood being tossed around lately? By now you’d have to be living under a rock to not have heard of the superfood quinoa. Probably one of the most popular superfoods out there, but there are many that grow in your own back yard.

So what is a “superfood”? No, it’s not a carrot dressed in a red and blue spandex suit with a big S on the front (feel free to use that as your geeky foodie Halloween costume by the way). It’s better than that! Hard to believe anything could be better than that, I know. Superfood’s are simply foods that have an exceptionally high nutrient density, including phytochemicals and antioxidants.

Some superfoods you may be familiar with are North American berries, like blueberries, raspberries and strawberries. Parsley and oregano along with other herbs are known superfoods, as are sprouts and leafy greens and the ever so common flax seed!

Roasted Squash and Quinoa Salad with Baby Greens and Cranberries

I’m a big fan of doubling my efforts to get 2 meals in one. Today’s recipe is one of those. Actually, I find all roasted veggies really have that potential. Like the Roasted Carrot recipe I shared a while back, or roast beets to make this soup today and use the rest to make this Roasted Beet Bruschetta tomorrow.

I mean really, isn’t it nice to not have to always cook every night?

Isn’t having a night off from time to time such a great feeling?

I love cooking but even I need a night “off” once or twice a week. In case you were wondering, I don’t consider making a salad cooking, or chopping up vegetables to eat on toasted bread cooking either, nor is heating up leftovers (one of my favorite cooking experiences). To me that’s just getting ready to eat.

TV Tuesday #36: The Perfect Apple Cabbage Salad to Keep Your Health On Track

 It’s no secret that a majority of people out there have one of these three New Year’s resolutions or goals.

Lead a healthier lifestyle.

Lose weight.

Eat better.

That’s where this salad comes in. It can help you fulfill each of those with a simple 2 ingredient salad and a simple vinaigrette. Eating more veggies are crucial to good health, can help you lose weight and are part of a healthy lifestyle, yet veggies seem to be less appealing in the winter. Winter vegetables don’t get the same attention that spring and summer veggies get. But there are some fabulous vegetables that are easily accessible and inexpensive all year round. And I hope that this recipe will help the simple cabbage get a little more attention and help you reach your goals.

The Gift Of Family and A Versatile Roasted Carrot Recipe

Before I get into the recipe…I think we should get caught up! After all it’s been awhile.

I missed you so much.

You know, I hadn’t intended to be away quite so long. I had hoped to host our regular Keep It Real Thursdays, but alas, I’m a few days late.

It has been a hectic couple of weeks and I am glad to be back to a regular routine. We had some challenges, suffered losses and over came some health issues, human and canine. But such is life.

The good news is that in each case there was a silver lining and I am so thankful for the blessings in my life.
