Paleo Brazil Nuts, Lime and Hemp Power Bars

Paleo Brazil Nut, Lime, & Hemp Power Bars-4095

I am so pleased to introduce Tessa. One of the first ‘friends’ I made on this crazy thing called the internet. Her website offers endless, seriously ENDLESS allergen free recipes. Whatever allergies you might have, she’s got a recipe that can help. Which is no small thing considering we’re talking about casein, gluten, corn, sugar free and Paleo. Most surprisingly is that there is no shortage of baking and treats on her sight that can fit almost any dietary restrictions. So you can have fun too.

Thank you everyone for welcoming Tessa from TessaTheDomesticDiva.com

This recipe was born of a flavor combination of a shortbread cookie I had in my past: a truly magical combination of Brazil nuts and lime.

Before those cookies…Brazil nuts were very under appreciated in my world.  Now I wonder how I didn’t always love them.  SO buttery and SO nutritious!

Cranberry Pear Smoothie – Bring On The Fall Flavors!

Cranberry Pear Smoothie

Smoothies don’t always have to include berries. By stepping outside the box, there’s a whole world of flavour combinations awaiting you! I thought I’d share my favourite fall smoothies.

Cranberries have become my new ‘go to’ smoothie fruit. I love that they are tart, relatively low on the glycemic index and offer all kinds of anti oxidants. It’s not news that cranberries also help with urinary tract health. For all those ladies out there that get what my sister calls ‘C.U.T.I. ‘ (acute urinary tract infection) pronounced cutie, ‘like you’re such a cutie patootie’. Except a C.U.T.I  is never cute. Cranberries also help promote mouth health by inhibiting mouth bacteria (your hygienist will thank you) and it’s research is showing promising results for cancer prevention.

Simple Strawberry Quinoa Salad with Peas and Dill

Strawberry Quinoa Salad 3The real beauty of cooking in the summer is that it is almost effortless. There are so many vegetables and fruits to be enjoyed at the peak of their vibrancy, that very little cooking, prepping or fussiness is required. Don’t get me wrong, I love a braised beef recipe or slow cooked Bolognese. But I revel in the effortless masterpieces one can create with simple seasonal ingredients. It’s vibrant food at it’s best, doing all the work! There’s no need for heavy sauces or complicated salad dressings to mask the taste of “less than fresh” vegetables.

Take this summer strawberry quinoa salad for example. With summer still clinging onto every cell, the peas, strawberries and dill come from a local organic farm I recently stumbled across in this neck of the woods (the boreal to be exact). They had a bounty of fruits and vegetables for me to pick from, I literally could NOT take a selection of everything home. Since strawberries were just coming off their second field and the peas looks ready to eat on the spot they were my first choice and in essence the inspiration for this effortless salad.

Tostadas with Cocoa Spiced Pinto Beans and Peach Mint Salsa

Chocolate Pinto Bean Tostadas

Today was a day to mix comfort, warming foods with the fresh and bright flavors of summer. Sure I could have made pie….

Shoot. I should have made pie!

No matter, this is better than pie. Chocolate for lunch anyone? Oh yeah baby!

Enter Tostadas – which I love.

Essentially, tostadas are the perfect platform for just about any tasty topping. These chocolate beans are warm, spicy and almost creamy. There’s a kind of earthiness to them. Top the whole dang thing off with the bright juicy flavors of peach and refreshing mint. I can guarantee you won’t be thinking about pie. If you make your own tostadas, you can avoid the deep frying oil too. If you’d like to make your own, bake tortillas in the oven at 375 F for 10 minutes or so. They turn out perfectly crisp without the rancid vegetable oil.
