The Best Summer Dessert: Peaches with Ricotta and Salted Maple Brazil Nuts

Peaches and ricotta with Salted Brazil NutsDessert or Breakfast?

These are the dilemmas I was faced with yesterday. Sure dessert for breakfast isn’t one of the world’s big challenges, but most of the world’s problems don’t come together in 10 minutes or please the mouth or stomach as well as this either.

I’m a late comer to ricotta. Not sure why. But once I get fixated on something, it’s hard to shake it. I’m like a dog with a bone until something else gets my attention and I’m onto my ‘new thing’. You don’t need to do anything to ricotta and fruit to make it a sinfully good dessert (which is not sinful at all and I sometimes enjoy for breakfast). A few slices of perfectly ripened fruit, a 1/4 cup of ricotta and the smallest drizzle of honey or maple syrup is all it takes. It is the best summer dessert (or breakfast) that comes together easily in minutes.

Pear, Ginger and White Chocolate Muffins

Who wouldn’t want to wake up to these muffins in the morning? Don’t they sound decadent? But of course I had to include whole wheat flour and include yummy rolled oats. I loved the idea of pears and ginger together but the recipe that inspired this creation had a typo because they didn’t work out at all (in hindsight I should have caught the error: 7 1/2 cups of flour to make 24 muffins). So I started from scratch and this recipe was much better.

I don’t often post breakfast recipes here, since I contribute to Enjoy Life with Breakfast. Occasionally, I just have to share a recipe with all of you right away. With the weekend coming up, I can’t imagine a more delightful muffin to savor, warm out of the oven with a cup of tea, as you ease yourself into a lazy day.

Lentil Sweet Potato Stew with Currants

Don’t we all want a great winter staple, rainy day stew or comfort food that won’t ruin the diet, waste line or leave you feeling guilty after eating it? Don’t we all deserve comfort food that leaves us feeling good about what we just ate? So the next time comfort food is in order,  if it has been a long day and the weather has taken a turn for the worst, then give this little gem a try!

If you’ve never had the opportunity to cook with Puy Lentils or French green lentils, maybe this will provide some motivation to pick some up the next time you’re out. They are more pricey then the regular green lentils but with that more flavorful and the texture is considerably better. They keep there small, delicate shape and take about 20 to 25 minutes to cook.
