Tasty Flax Seed and Almond Cracker Recipe: Full of Omega 3s and Low Carb

Flax Seed and Almond Crackers
I wanted to make a cracker recipe for my friends upcoming visit. The thing about being out in the bush is that you really look forward to people coming to visit. I have been hard at work creating recipes. She no longer eats gluten (for blood sugar reasons) and eats grains in very small amounts. It’s kind of a blend of the Wheat Belly Diet and Eat Right 4 Your Type (affiliate). I wanted to keep that in mind while meal planning for her stay. I picked out some fun cocktail recipes including one made with cilantro lime vodka, and a sparkling wine cocktail made with dark cherry syrup (homemade and low sugar of course). Fun!

I also developed these 3 Ingredient Savory Pancakes. One thing she has been recommended to eat a lot of is cheese and dairy. I thought the yogurt topping would be a nice way of sneaking in some healthy probiotics using Greek yogurt. However, with the cheese (as far as I’m concerned) we’ll need crackers!

Apple Blackberry Crumble With Hazelnut Topping (GrF, GF,DF)

No refined sugar, no grains, optional dairy, easy substitutions…what more could a person ask for in a sweet treat?!

I don’t make desserts that often. I find I don’t have a lot of self control when it comes to having desserts around the house. So I usually save making desserts for when we have guests, or a birthday, and when I can usually send some home with our guests to lessen how much is leftover the day after.

There’s a problem with that though. I like having dessert once a week and I honestly don’t think there’s anything wrong with that. I also like to make them at home, because I have more control as to what kinds of sugars are being used, better quality flour and overall, a little healthier so they have less impact on the body. But we honestly don’t have people over that often…so that makes having dessert a 5 times a year kind of event.

And to be honest…that’s just not going to cut it!

Pan Fried Scallops with Golden Almonds and Creamy Cauliflower

I love date night. Sometimes date night is just me, myself and I. It’s a chance to kick back and relax by myself with an easy meal and a glass of wine. Other times it falls into the more traditional category (aka dinner with another human being). I try to treat myself at least once a week to a beautiful meal that isn’t rushed or stressful. The type a night when you remember to put on some music and light a candle or two and eat with a a proper napkin. Some weeks are better then others, and then there are weeks like this one, where I get to Friday in a whirlwind and wonder where the week went.

5 Minute 4 Ingredient Peanut Butter Pie Filling – DF, GF, GrF, Vegan, Refined Sugar Free

I have this dear friend. She’s the only other person I know that loves peanut butter desserts more than me. I know I can always count on her to help me search out the next ‘best’ peanut butter pie recipe. We have a bond.

It’s important you know. Bonds, that is.

We met over the topic of dogs, we each had one. Mine with major behavioral problems, hers an angel. We later discovered we both loved scotch, long walks, a good Americano, good food and kind hearts.

Keep it Real Thursdays – Unbelievable Quinoa Buckwheat Granola (GF, DF, VG)

My best friend in the whole wide world is visiting me this week and I’m super excited. We have a camping trip planned to check out Salt Spring Island and I’m really stoked. As a result we need easy no fuss breakfast solutions. What better camping breakfast food (and anytime breakfast food) than granola?

Why I love granola:

  • It pack easily
  • Keeps well in an airtight container
  • It is nutritiously dense
  • The ingredients are really flexible
  • Its easy to make
  • Can be eaten as a snack as well as for breakfast
  • It taste freaking amazing
