Mint and Lime Mahi Mahi with Dill Yogurt Sauce

As my season at the tower is coming to an end, I have so much to be grateful for. Overall, it was a great season.

Translation. The bugs weren’t too bad. Seriously.  Such. A. Blessing.

But there was other stuff too. The noise they told me about; coming from all the industry that has popped up around the tower, wasn’t bad and some days almost none existent. Bonus!  The road coming out to the tower has been well maintained so going into town was more regular than it had been in the past. Translation? Running out of food was rarely a problem except for that one time where I panicked. But I learned my lesson and realized I could get through just about anything. I managed to have decent internet out at the cabin which is saying a lot since it’s in the middle of nowhere. It came at a cost…but I’m still grateful. After all, it’s the reason I was able to share all my creations over the last 5 months with all of you.

Simple Strawberry Quinoa Salad with Peas and Dill

Strawberry Quinoa Salad 3The real beauty of cooking in the summer is that it is almost effortless. There are so many vegetables and fruits to be enjoyed at the peak of their vibrancy, that very little cooking, prepping or fussiness is required. Don’t get me wrong, I love a braised beef recipe or slow cooked Bolognese. But I revel in the effortless masterpieces one can create with simple seasonal ingredients. It’s vibrant food at it’s best, doing all the work! There’s no need for heavy sauces or complicated salad dressings to mask the taste of “less than fresh” vegetables.

Take this summer strawberry quinoa salad for example. With summer still clinging onto every cell, the peas, strawberries and dill come from a local organic farm I recently stumbled across in this neck of the woods (the boreal to be exact). They had a bounty of fruits and vegetables for me to pick from, I literally could NOT take a selection of everything home. Since strawberries were just coming off their second field and the peas looks ready to eat on the spot they were my first choice and in essence the inspiration for this effortless salad.

Deliciously Holistic – A Book Review and Lemon Dill Goat Cheese

I have had the pleasure of receiving Deliciously Holistic* by Shelley Alexander, this past week. Thank you Shelley for sending me your lovely book to review.** I have spent the last week flipping through it daily, reading not only the recipes, but the wealth of knowledge that it contains. What’s different about this book is that it is a resource, not just a bunch of great recipes (which it also has, more than a 150 in fact).

Maybe I should start by telling you a little bit about Shelley. She is the owner of one of my favorite blogs and companies, A Harmony Healing. She received her chef’s training at The Los Angeles Culinary Institute and is a certified healing foods specialist and holistic chef. So it’s not surprising that every recipes leads in with information about each recipe.

Not Your Grandma’s Potato Salad

Nothing too fancy here folks…just potato salad. This one dosn’t have any heavy dressings but rather has flavor from tomatoes, capers, dill and good quality olive oil.

It’s not your grandma’s potato salad of course. I don’t have any of the ingredients to make that kind of salad, so I decided to try something a little different instead. This Roasted Potato Salad comes with oven roasted grape tomatoes (which adds a nice sweetness), crispy capers, fresh dill and crispy spinach leaves.

This is a simple, yet complimentary flavor pairing that is sure to win you over. No need for heavy creamy dressing when you’ve got olive oil, lemon juice, smoked paprika and dill.

TV Tuesday #35: Holiday Appy: Sour Cream Dill Dip in 5 Minutes

I love simple! A few ingredients and an outstanding taste, what more can you ask for in a recipe?

The first time I tried this dip (my friend made some for our camping trip) I was smitten. When I asked for the recipe, she said there really wasn’t one. It was a few ingredients mixed together and it took less than 5 minutes to make. I was floored.

“Really?” I said. I couldn’t believe the simplicity and the taste!

So what better time to introduce this lovely dip now, since  entertaining is at it’s peek during the holidays. Take those expensive store bought dips out of your shopping cart and save yourself some money while feeling good that you’re not serving up any preservative, chemicals or “natural flavors” in your dip.
