What could be more exciting than yummy pear and hazelnut tarts?

Yeah, I agree. Not much. They pretty much rock my world.

But I do have some news that comes pretty close. First, I’ll be leaving for Vietnam in less than a weeks time! Actually, by this time next week, I’ll be on a plane! I am ridiculously excited not only to see my friends that have been living there for 5 years but also for a new adventure, since I’ve never been. Have you been? Butternut Squash, Leek and Hazelnut Gratin

Butternut Squash Leek and Hazelnut Gratin (GF)Depending which camp you’re in, fall arriving is good news or bad news. Either way, Butternut Squash Gratin is good news! Very good news. Pair the whole cheesy mess with leeks and hazelnuts and you have magic! I chose to eat this for lunch one day with a salad and then had it for dinner as a side dish. It makes about 6 servings but it can definitely be made to serve a crowd if need be. For those Canadians out there, you might even want to add this to your Thanksgiving repertoire on Oct the 14th, 2013.

I never post that much when it comes to Thanksgiving dinner here at Beyond The Peel. But here are a few recipes I like for intimate Thanksgiving dinner.  This Sumac Cornish Game Hen recipe from Bon Appetit is delish and it’s become my go to fast and easy ‘turkey’. I like making game hens because they cook quickly and 1 feeds 2 people (which works our to be fairly inexpensive and the leftovers are not too much to handle). Because I’ve made this recipe several times I have a few changes I recommend. Only brine for 2 hours and cook the hens whole in the oven. Bake at 375 F for approx 20-25 minutes. Now that’s a fast ‘turkey’.

Apple Blackberry Crumble With Hazelnut Topping (GrF, GF,DF)

No refined sugar, no grains, optional dairy, easy substitutions…what more could a person ask for in a sweet treat?!

I don’t make desserts that often. I find I don’t have a lot of self control when it comes to having desserts around the house. So I usually save making desserts for when we have guests, or a birthday, and when I can usually send some home with our guests to lessen how much is leftover the day after.

There’s a problem with that though. I like having dessert once a week and I honestly don’t think there’s anything wrong with that. I also like to make them at home, because I have more control as to what kinds of sugars are being used, better quality flour and overall, a little healthier so they have less impact on the body. But we honestly don’t have people over that often…so that makes having dessert a 5 times a year kind of event.

And to be honest…that’s just not going to cut it!

Poached Pears with Hazelnut Shortbread

When it comes to entertaining, anything that can be made ahead of time is a big bonus. If the ingredients are flexible, even better. And by that I mean, if it can be made gluten free or dairy free or vegan then I can keep the same menu no matter who is coming and adjust on the fly depending on allergies and preferences.

Poached pears happen to be relatively inexpensive to make and they can be fancied up or dressed down for more casual affairs. This is a kid friendly version but if you’re only entertaining adults, than it can be made with red wine. Yum.

The hazelnut shortbread is entirely optional. If you have someone who is following a grain free diet, they can still enjoy this beautiful dessert without the cookie and still not feel deprived. Even better!

Keep it Real Thursdays – Unbelievable Quinoa Buckwheat Granola (GF, DF, VG)

My best friend in the whole wide world is visiting me this week and I’m super excited. We have a camping trip planned to check out Salt Spring Island and I’m really stoked. As a result we need easy no fuss breakfast solutions. What better camping breakfast food (and anytime breakfast food) than granola?

Why I love granola:

  • It pack easily
  • Keeps well in an airtight container
  • It is nutritiously dense
  • The ingredients are really flexible
  • Its easy to make
  • Can be eaten as a snack as well as for breakfast
  • It taste freaking amazing
