Keep It Real Thursdays – Grilled Peach, Lentil and Parsley Salad

Having cooked lentils in my fridge has become a time management tool of mine. It allows me to put salads, soups and side dishes together in minutes. Take this 3 minute salad for example. With lentils on hand, I can put super healthy meals together in less time than it takes to go through the drive thru.

Now this is not a 3 minute salad, but if you chose not to grill the peaches or toast the hazelnuts, this salad comes together in less than 5 minutes and is also delicious. If you choose to grill the peaches and toast the hazelnuts on the grill it’s still a fabulously nutritious meal that not only impresses but comes together in less than 15 minutes. Not bad, right?

Tunisian Tomato Lentil Stew – Fridge to table in 30 minutes (DF, GF, Vegan)

Some of you must have been very worried about me.

It’s been ages since I posted a lentil recipe, so some of you MUST have thought I was sick or something. I’m here to tell you that you can sleep easy tonight knowing that all is well. Lentils still are, and always will be, one of my favorite legumes.

Simple 3 Minute Salad For Days When It’s All Too Much

Ever get one of those days when it all feels like too much? Like the walls are caving in and you can’t find a way out?

I mean, I don’t. Not me.

I’m just saying if you do…

then trying to figure out how to eat healthy is the last thing on your mind.

The challenging part is if you don’t eat healthy, you end up feeling even worse. So it can be a little like a vicious cycle. So now what?

This salad is one I put together this week that accomplished the job nicely. I was surprised how quickly I went from starving and grumpy to sitting down to a lovely lunch. I would even go so far as to say I felt like I was eating out at a bistro. That’s my kind of meal!

Coffee Cinnamon Protein Brownies

I hope everyone had a wonderful weekend. Ours was so much fun! We’ve been back a couple of hours and I just had to write to tell you all about it.

The first uber fun thing we got to do was a cooking demo at Beyond The Kitchen Door on Saturday. We had a great turn out and thank you to everyone who showed up! For those of you who were requesting the recipe we featured, here’s the link.

We absolutely love doing the demos, but especially during this time of the year. The store is full of Christmas cheer and people looking for fun gifts for loved ones. What better place to shop than a kitchen store, right? So much fun. We had the opportunity to meet with so many great people, which is the real reason we do it. I love getting to meet new people from our community and it’s even better when we’re brought together because of good, healthy, real food.

Roasted Pork Shoulder with Puy Lentils and Root Vegetables

Those of you who follow my blog know that I love simplicity in the kitchen. It’s not to say that I don’t enjoy a good fussy recipe from time to time or have times when I spend the whole day (9 am to 8 pm) in the kitchen in absolute bliss, but I think of those as the exception not the rule. The less chopping and stirring the better.

Enter cheap cuts of meats. I love inexpensive cuts of meat because they require long cooking times at moderate temperatures with little to no supervision. The price tag doesn’t hurt either. Now I am certain that you could do this in a crock pot if you have one, but I love using my bright orange Le Creuset pot. Set the ingredients to go in the morning and come home to a home cooked meal with the house smelling amazing.
