Cauliflower Couscous Salad with Plums & Prosciutto

Today was one of those days when I wanted a couscous salad. Without any couscous to be had, I made do. I’d used the idea of ‘ricing’ cauliflower before and I’d seen it used in a risotto (brilliant but I have yet to try it!), as rice and as couscous. There seemed to be no time like the present to try it. It helped that the pressure was on, because I had a cauliflower going bad in the fridge. Kinda like the time I made this. It was one of those ‘use it or lose it’ moments.

The other ingredients in this recipe come from a most brilliant surprise. A visit from my sister! You should know, out here any visit at all is really nice, but a visit from a sister is truly special. Like Christmas! She even came bearing gifts! Of course in my house, the best gifts of all tend to be food and wine.

Healthy Herbed White Bean and Olive Salad

I don’t often talk about the specific health benefits of the ingredients I use in my recipes, but I felt I needed to “sell” it a bit. There’s nothing real sexy about white beans, but this salad is light, filling and surprisingly tasty in its simplicity. But wait til you hear how good it is for you.

This power house of a salad is high in fiber, protein and iron. All due to the mighty little white bean. In 1 cup of beans, you’ll get 75 % of your required fiber, 30% of your protein and 24 % of your iron! Now that’s one packed little bean. It’s one of my favorites because it’s inexpensive (love that part) and easy to find at any super market. It also has a mild taste which makes it’s easy to incorporate into recipes. Want to know more? Magically Versatile Any Time of Day Quinoa Salad

Ho hum quinoa to delicious meals

This time of the year is tricky, because it is CRAZY. Crazy busy!

When things get nutso, I make this quinoa salad. It’s like your favorite convertible bra, except with food. With a few easy switches of a strap it can go with any outfit or in this case, a few veggies or sauce.

When time is short, I make one hardy, flavorful “thing” that I can eat at breakfast, lunch or dinner. In this particular case, a salad. Yes, salad for breakfast. Stick with me, I’ll explain.

On May long weekend, when the camping season officially starts, forest fire potential goes up. Mostly because as humans we can be a little dumb. It’s true. In Canada at least, people want to get out in the back woods, go fishing, camp, have fires (no explanation required), drive quads (they do indeed start fires) through the forest, which in turn means higher potential for fires. Mostly because the grass is still dead and the stuff lights up like cheap whiskey.

Keep It Real Thursdays – Grilled Peach, Lentil and Parsley Salad

Having cooked lentils in my fridge has become a time management tool of mine. It allows me to put salads, soups and side dishes together in minutes. Take this 3 minute salad for example. With lentils on hand, I can put super healthy meals together in less time than it takes to go through the drive thru.

Now this is not a 3 minute salad, but if you chose not to grill the peaches or toast the hazelnuts, this salad comes together in less than 5 minutes and is also delicious. If you choose to grill the peaches and toast the hazelnuts on the grill it’s still a fabulously nutritious meal that not only impresses but comes together in less than 15 minutes. Not bad, right?
