Grapefruit Avocado Ginger Smoothie

Though I’ve always loved a good smoothie, I have to be honest, it’s only in the last 6 months that I’ve really gotten into them. I used to like them, but most days the thought never even occurred to me.

Not sure why.

Now I have them almost everyday. Yup. Every. Single. Day.

It’s the perfect lazy man’s meal in a glass. It’s like a salad without having to worry about the dressing. Or chewing for that matter.

Which means it’s in my belly and I’m off to get on with my day.

I like changing up the flavors almost daily since it gives me a wider range of nutrients.

Not Your Grandma’s Potato Salad

Nothing too fancy here folks…just potato salad. This one dosn’t have any heavy dressings but rather has flavor from tomatoes, capers, dill and good quality olive oil.

It’s not your grandma’s potato salad of course. I don’t have any of the ingredients to make that kind of salad, so I decided to try something a little different instead. This Roasted Potato Salad comes with oven roasted grape tomatoes (which adds a nice sweetness), crispy capers, fresh dill and crispy spinach leaves.

This is a simple, yet complimentary flavor pairing that is sure to win you over. No need for heavy creamy dressing when you’ve got olive oil, lemon juice, smoked paprika and dill.

TV Tuesday #39 – Kitchen Basics: How To Perfectly Braise Meat

A recent issue of Bon Appetit had the headline on the cover “The Cooking School Issue.” I was excited. Maybe there was something fun in there I could share with all of you. Out of 5 techniques they demonstrated, this is by far the most practical.

Braising is a simple 4 step technique that will render perfectly cooked and tender meat every time. Braising relies on heat, time and moisture to break down tough connective tissue in meat, which makes it ideal for tougher cuts of meat. This means you can use cuts of meat that would otherwise be tough or lacking in flavor and turn them into an elegant meal, suitable for the grandest of guests. The best part is, this 4 step technique takes relatively little time for the quality of flavor you get in return. And even if you are a beginner cook, you can still turn out a restaurant quality meal. That’s the part I love the most.

TV Tuesday #38 – Fast and Easy 10 Minute Coconut Spinach Soup

Every one needs a meal that can come together quickly, when the hunger hits. Though salads can come together easily enough, sometimes something hot is in order.

That’s where this 10 minute coconut spinach soup comes in.

The thing about soup is that it can take hours or minutes. Whether you’re putting together a beef and lentil soup, a French onion soup or a vegetable based soup, the cooking times can vary anywhere from 2 hours to 10 minutes. This soup is the latter of the two.

The Gift Of Family and A Versatile Roasted Carrot Recipe

Before I get into the recipe…I think we should get caught up! After all it’s been awhile.

I missed you so much.

You know, I hadn’t intended to be away quite so long. I had hoped to host our regular Keep It Real Thursdays, but alas, I’m a few days late.

It has been a hectic couple of weeks and I am glad to be back to a regular routine. We had some challenges, suffered losses and over came some health issues, human and canine. But such is life.

The good news is that in each case there was a silver lining and I am so thankful for the blessings in my life.
