This complex little cookie is light, fluffy and slightly chewy all at once. Cooling anise gives it character, while chia adds a delicate texture, similar to poppy seeds.

If you really want to dazzle your family and friends (or yourself, why not?) drizzle over this lemony yogurt glaze for a burst of sweet and tart!

Mint and Lime Mahi Mahi with Dill Yogurt Sauce

As my season at the tower is coming to an end, I have so much to be grateful for. Overall, it was a great season.

Translation. The bugs weren’t too bad. Seriously.  Such. A. Blessing.

But there was other stuff too. The noise they told me about; coming from all the industry that has popped up around the tower, wasn’t bad and some days almost none existent. Bonus!  The road coming out to the tower has been well maintained so going into town was more regular than it had been in the past. Translation? Running out of food was rarely a problem except for that one time where I panicked. But I learned my lesson and realized I could get through just about anything. I managed to have decent internet out at the cabin which is saying a lot since it’s in the middle of nowhere. It came at a cost…but I’m still grateful. After all, it’s the reason I was able to share all my creations over the last 5 months with all of you.

I have had the pleasure of receiving Deliciously Holistic* by Shelley Alexander, this past week. Thank you Shelley for sending me your lovely book to review.** I have spent the last week flipping through it daily, reading not only the recipes, but the wealth of knowledge that it contains. What’s different about this book is that it is a resource, not just a bunch of great recipes (which it also has, more than a 150 in fact).

Maybe I should start by telling you a little bit about Shelley. She is the owner of one of my favorite blogs and companies, A Harmony Healing. She received her chef’s training at The Los Angeles Culinary Institute and is a certified healing foods specialist and holistic chef. So it’s not surprising that every recipes leads in with information about each recipe.

3 ingredient savory pancakes!

Actually, it’s better than that. 3 ingredient healthy pancakes.

How freakin’ awesome is that?

Now other than their shape, they have very little in common with the North American breakfast staple. In fact, they are almost the opposite. These pancakes will stabilize blood sugar levels instead of sending it through the roof, like your typical dose of diabetes on a plate.

With a base of broccoli and eggs, these pancakes are healthy, veggie packed, protein rich and loaded with omega 3s and totally satisfying. I even threw in a little turmeric for the benefits of curcumin. They also happen to be gluten free, grain free,  and they definitely don’t need syrup.

Honey Balsamic Strawberry White Chocolate Shortcake (with sprouted flour)

Dessert is dessert and as a result, not terribly good for us. Most of them that is. That being said, we all like dessert and having a sweet treat from time to time isn’t such a bad thing. That’s where fruit desserts come into play. Because fruit is already naturally sweet it’s easy to ease up on the added sugars. Bonus!

I have never met someone who doesn’t like strawberry shortcake. Have you? Its not too sweet, just sweet enough, juicy red fleshy fruit, all on top of a light and slightly sweet biscuit. Perfection in my books.

Not only is it the strawberry shortcake the quintessential strawberry dessert, strawberries are just coming into season for us in my neck of the woods. This makes me very happy. Hello, strawberry daiquiris!
